why not do it yourself? if you're good enough to play the panic tracks, you'll be good enough to transcribe. if you want to cheat a little, google some guitar tab and write out the chords for each bar on manuscript, then get your ipod, sit down at the piano, play a bar, hit pause, write down the melody, lather rinse repeat. once you have the melody and chords down you can start having fun playing around with it a bit. if you get really stuck making it into a good violin part why not burn the track to a cd for your violin teacher and ask him/her to help make it a bit more idiomatic for a string instrument.
I suggest you start with NitA - it's a nice easy chord progression, not too tricky a melody and it's fun to play. it took me about 4/5 hours to transcribe it for a small ensemble (piano, acoustic guitar, violin and voice) and nothing really gave me too much trouble. Northern Downpour would probably be good too as there's only about 6 chords total and it's a lovely lyrical melody which would work for strings.
hope some of this is helpful
